i’ve always been inspired to try & produce as much as i can solely from ingredients i can make myself. oxymels have always been something in medicine making that fits that bill for me - as it only requires vinegar & honey to extract plant matter, as opposed to alcohol extracts (which are technically more potent, but require a whole manufacturing process that’s completely foreign to me!). though i don’t make my own vinegar (yet!), i am proud our honey helps create this local sweet & sour treat.
ingredients: locally foraged beach rose, fresh strawberries, MWA grown meadowsweet, marshmallow leaf, linden, ACV & our own essex ma honey
directions: add a splash or 1-2 tsp oxymel to sparkling water or choice to replenish some nutrients, or sip straight as a pre-digestive, or add to dressings to soak up the essence of a breezy summer day
